EGGPLANT LASAGNA!!!! OH YEAH! It doesn’t get any better then this! Seriously though I had to ask google how to spell lasagna. I know…I know its easy to spell for you, but I honestly get the “n” and “g” mixed up so to me lasanga and lasagna look the same until I notice the red spelling error line under the wrong word.

Now to be super honest, I’m not a professional writer! *GASP*! Shocker right? Okay come on, if you have read anything from my blog then you know I ain’t no Shakespeare with words or spelling. Let’s just be thankful I’m a visual person and I know how to make amazingly delectable dishes. Okay, enough about me…onto the RECIPE!!!!

Delicious and Healthier Eggplant Lasagna

To make this recipe you’ll need 2 eggplants, one 8 oz package of mushrooms, one 16 oz bottle of pasta sauce, 1 onion, 1 bell pepper, oil for the skillet and eggplant slices, salt, pepper, garlic powder and oregano.

Preheat the oven to 375, while it heats up slice the chicken and eggplant thinly as shown in the photos above. It helps to slice the eggplant on a mandolin if you have one. Rub the eggplant with oil and place on a cookie sheets in the oven for about 10 -12 minutes. Place the chicken on cookie sheets and heat for the same amount of time 10-12 minutes.

While the chicken and eggplant are cooking, dice up the mushrooms, onion, bell pepper and garlic. In a saucepan or skillet saute the garlic and onion on med heat. Once the onion becomes fragrant, add the mushrooms and bell pepper. Continue sauteing for about 4-5 minutes. Transfer the mixture to a bowl and add the tomato sauce to it.

Next add the spices to the mixture and mix thoroughly. By now the chicken and eggplant should be ready. Gather all your ingredients and oil a 9×13 inch dish. Now comes the fun part. The Layering!!!

Start with a thin layer of sauce on the bottom, then a layer of eggplant, sauce,  chicken, sauce, eggplant, sauce repeating until the last layer of eggplant covered in sauce. Then you’ll want to sprinkle Parmesan cheese all over the top and heat in the oven for about 20-25 minutes on 375.

The eggplant lasagna will look like this (see photo above) before being cooked, and you know it will be done when it looks like the photo below on the left. This recipe could also be made with layers of cheese if you wanted it. I made it this way to make a healthier version of the comfort food I love.

Ingredients
  1. 3 Chicken Breasts Cut into Slices
  2. 1 8 oz Package of Mushrooms Diced
  3. 1 16oz Bottle of Pasta Sauce
  4. 2 Eggplants Thinly Sliced
  5. 1 Onion Diced
  6. 1 Bell Pepper Diced
  7. Oil For Skillet
  8. 1/2 tsp Garlic Powder
  9. 2 Cloves of Garlic
  10. 1/2 tsp Oregano
  11. 1/2 tsp Pepper
  12. 1/2 tsp Salt
Instructions

Notes
  1. You could add a layer of shredded cheese after each layer of sauce.
